I always make my husband cheese enchiladas for his birthday on December 18th. This year we had a winter storm that knocked out our power. No enchiladas.

We got our power back after three days. I got the flu. No enchiladas.

Finally yesterday with my health and electricity both restored, I made his birthday enchiladas.

Best enchiladas ever.
